AGRONOMIC CHARACTERISTICS Grape variety: Nebbiolo Soil: clayey-calcareous Exsposure and altitude: south/south-west - 300 m Max crop./hectare: 80 ql/hectars Harvest period: end of September/beginning of October Picking up: 100% by hand in small cases Growing location: Grinzane Cavour OENOLOGICAL CHARACTERISTICS Vinification: de-stemming, prefermentative maceration and déléstage, fermentation and maceration on the skins for approx. 15 days at a controlled temperature (27°C). The must is pumped over 4/5 times per day, then the “submerged cap” maceration from 30 to 60 days, depending on the grapes characteristics. The malolactic fermentation is completed right after the alcoholic. Ageing: 24 months in barrel of 20 HL of Slavonian Oak and then 12 months in bottle. WINE CHARACTERISTICS Colour: Bright ruby colour Nose: Well defined aromatics of red fruit, dried rose and sweet spice. Taste: supple and vibrant this Barolo reveals a remarkable texture both velvety and sinewy with a fine and long aftertaste. Storage: 20 years or more, depending on the vintage; it is therefore recommended to store the bottles lying down in a dry place at a cool temperature. Serving temperature:16/18° C. Pairing with food : Ideal with grilled foods, sauced and elaborate red meat and wild game. Also as a meditation wine after the meal with dark chocolate and patisserie.
